Spread the cashews out on a baking sheet and roast for about 10 minutes, until lightly golden brown. Allow to cool. 2. In a food processor or high powered blender, combine roasted cashews, melted coconut oil, agave nectar or maple syrup, vanilla extract and salt.

5. Once “eggs” are set and chocolate is melted and smooth, carefully dip each one into the chocolate coating until completely covered then place back on parchment paper lined baking sheet 6.. Place back in freezer for another 10-15 minutes to allow chocolate to harden then enjoy!
