For the vegan ricotta: In a high speed blender, combine 1 cup raw cashews that have been soaked in water for at least 2 hours (or overnight), drained and rinsed; 1/4 cup freshly squeezed lemon juice; 3 tablespoons olive oil; 1/4 cup + 2 tablespoons plain unsweetened non-dairy milk; 1 teaspoon dried oregano; 1/4 teaspoon sea salt. Blend on high until completely smooth and creamy, scraping down sides as needed. Set aside.
